The Wadias had booked us for their son’s birthday cake the moment they tasted one of the cakes we had baked. Darius was turning 2 and we wanted to commemorate that. After brainstorming we decided an elevated ‘2’ with colourful candies would be just the thing he’d love!
We used Namita aunty’s convection oven to bake. Big mistake. The machine was known to cause problematic middles in the cake. So the first batch came out shaky. We had to rebake for about 3 times (20 mins each). The second batch we did as the convection’s set time for cakes. Phew.
Thankfully, both the cakes came out nice and crusty on the surface and gooey and dense on the inside!!
After the cake cooled off a bit, we joined the pieces and cut a perfect two for the top layer! The results? Voila!!
Darius also liked it. What say?
